Sift dry ingredients (except sugar) and set aside. Beat eggs, sugar, oil, and vanilla. Stir in dry ingredients and beat well. Fold in apples and nuts. Mixture will be real stiff, don’t panic. Spread evenly in a greased and floured baking pan 10 x 15 or bundt pan, or 2 small loaf pans. Sprinkle top with cinnamon and sugar mixture. Bake 55-65 min. 350 degrees.
